Gluten Free Pizza Dough


500g plain gluten free flour   

3 tsp baking powder

½ tsp salt
1 tbsp sugar  

1 tsp xanthan gum

750mL water

50mL virgin olive oil 

  1. Beat all of the ingredients with a mixer until smooth, it will still be quite runny (a little like thick pancake batter).
  2. Spoon batter onto trays (approximately 6) lined with baking paper, and use the back of the spoon to smooth the batter into a disc shape (the size of a plate sized pizza).
  3. Bake in the oven for 15 minutes at 180ºC, this will par-cook the base, it shouldn't brown.
  4. The base can now be used immediately as you would any other pizza base or leave to cool,  and freeze until needed (leave paper between bases to keep separate.
  5. To bake, top as per a standard pizza and bake till cooked (10-15 minutes at 220°C)

Makes approximately 6 bases.
